Are there any smart locks out there that don’t require proprietary apps or the cloud to work?
I’m looking for something where, even if the company went out of business, I could still use the lock with local software or even write my own if needed.
Basically, a lock that has documentation available to connect and send commands like lock/unlock, change codes, add/remove users, pair/unpair phones, etc.

Agreed. Quite a few lock manufacturers offer Z-wave versions of their locks. You could check with alarm companies or home automation shops if you’re having trouble finding them.
